This simple 3-ingredient mojito mocktail is simple, bubbly and refreshing. Perfect for hot summer days without being overly sweet.
Oh do I love this drink. I became mildly obsessed (ok, a lot obsessed) with infused simple syrups when I was pregnant and have since turned into the “queen of mocktails”. I’ve experimented with everything from blackberries to jalapeño to vanilla.
Of all of the flavor combinations I’ve tried, mint is one of my favorites. What better way to use it than in mojitos? Non-alcoholic for me of course, although you could totally add some rum to these to make the classic version!

Mocktail Syrup (Mint Simple Syrup)
I totally get that it’s an extra step to make the syrup from scratch but trust me, once you have this on hand, you’ll be happy you took the time to do it. There are so few ingredients in this drink, you’ll want to focus on quality.
Here are some other mojito mocktail syrup uses:
- Other mint mocktails and cocktails - my watermelon mint fizz, mint juleps, vodka lemonades, or this cucumber mint gin gimlet
- Iced coffee/lattes - use it as a sweetener that dissolves beautifully, while also adding just a hint of minty flavor. I’m usually not a sweet coffee person but I love this.
- Fruit salad - drizzle over the top for a fun added flavor twist
- Salad dressings - this would work especially well for a grain salad that has a sweet component.
To make mint simple syrup, just add equal parts sugar and water to a small saucepan over medium heat and stir well until dissolved. No need to bring it to a boil or even a simmer. It should take less than five minutes.
From there you can add the mint, remove from heat, and let it hang out to cool. I like to transfer the cooled syrup into my favorite small jars for storage. You can remove the mint at this time, or just leave it in before screwing on the lid and refrigerating.
The syrup is really the highlight of this drink. Besides that, you’ll just need limes, more mint for a garnish, and some club soda.
